Chinese Cucumber Salad
I have been making this Chinese Cucumber Salad for years and my guests always love it. This is easy to make, affordable, healthy, and simply delicious. TRY IT!!!
Cucumber
* 1 cucumber (ca 350g/12ounces, unpeeled) and thinly sliced
* 150 ml hot water
* 1/2 tablespoon salt
Dressing
* 1 teaspoon cooking oil
* 1 big mild chili pepper, deseeded, sliced into rings (or a small hot chilli finely chopped)
* 1 tablespoons sugar
* 1/2 teaspoon grated fresh ginger
* 1 tablespoon dark soy sauce
* 2 tablespoons dark rice vinegar
* 1 tablespoon white wine
* 1/2 tablespoon sesame oil
* 1 garlic clove, finely chopped
* 1/2 tablespoon toasted sesame seeds
* 1 Red Onion Thinly Sliced
* 1 Bell Pepper (Red)
Instructions:
1. Slice Cucumber and Onion thinly.
2. Soaked sliced cucumbers in the saltwater mixture let stand for one half hour.
3. In a blender combine all ingredients EXCEPT for the cucumber, onion, red onion, sesame seeds, and red bell pepper
4. In a skillet toast sesame seeds until golden brown.
5. Drain water from cucumbers and combine all ingredients add sesame seeds.
6. Chill for one hour in the refrigerator and serve.
